    This 20‑Minute Easy Vegetable Lo Mein is a quick, colorful stir‑fry of noodles and crisp vegetables tossed in a savory soy‑based sauce. With both light and dark soy sauce adding depth and balance, it delivers authentic flavor in minutes. Keep it vegetarian or make it heartier by adding protein such as beef, shrimp, chicken, or pork — a flexible, fast, and satisfying meal perfect for busy weeknights.

    With snow peas ripening in the garden, they’re the perfect crisp addition to this fresh Lo Mein.

    Bring a large pot of water to a boil and cook the Lo Mein noodles according to the package directions.

    While the noodles are boiling, prepare the sauce. In a small mixing bowl, whisk together 3 tablespoons dark soy sauce, 2 tablespoons regular soy sauce, 1 tablespoon sugar, 1/4 cup vegetable broth, 3 cloves of minced garlic, and 2 teaspoons sriracha hot chili sauce until smooth. This sauce can be made ahead of time, and the vegetables can be chopped in advance, making assembly even quicker and easier.

    Wash, trim, and chop 2 ½ to 3 cups of bok choy into bite‑size pieces. A regular head of green cabbage, chopped, can be substituted, offering a similar crunch and flavor.
